Corned Beef and Cabbage
Every year we have Corned Beef and Cabbage on St. Patrick’s Day. Beer is also a major part of this celebration. When the kids were young Doug had Irish beer and the rest of us had Root Beer. As the kids have grown up they’ve moved to the Irish Beer side, but I’m still faithful to my Diet IBC!
This is really good served with Irish Soda Bread‼
Yield: enough for 6-10 depending on the size of your roast
Time: 10-12 hours
Equipment: a large Crock Pot
Flat Corned Beef – go with ½ lb per person
1 lg Green Cabbage
1 Carrot per person each cut into 4 pieces
2 sm New potatoes per person
2-3 Onions (total) cut into 8 or 10 chunks each
Irish Beer
Put the corned beef, fat side up into the bottom of the crock pot. If there is a packet of spices in the meat package, sprinkle it on top. Tuck the cabbage in on top of the corned beef and tuck the onions, potatoes and carrots around it.
Pour ½ bottle of Irish beer over everything. Give the rest to Doug (or whoever likes it).
Put the Crock Pot onto low and cook for 12 hours.
When done, put the veggies in a bowl and slice the meat. You can strain and reduce the broth in the bottom of the Crock Pot if you want, but it can be a little salty.
