Diane's Irish Soda Breads
Brown or Wheaten Bread (for everyday)
Chris says that his mother and grandmother, Diane and Irene, made a trip to Ireland when he was in Middle School and this is the bread they often had for breakfast while they were there. When they came back Diane worked to try to duplicate the bread from Ireland and this is the recipe she came up with. Chris remembers her making this bread often.
Ingredients:
1½ cup whole wheat flour
1½ cup all-purpose flour
1 tbs sugar
2½ tsp baking soda
½ tsp salt
2 cup buttermilk*
Instructions:
Preheat oven to 400° F. Grease a large loaf pan. Stir dry ingredients together in a large mixing bowl. Add butter milk and stir until dry ingredients have been completely moistened—dough will be quite loose and sticky. If it is not, add small amounts of buttermilk until it is. Scrape into prepared pan. Bake for 30 minutes or until it tests done. Cool on rack in pan for 10 minutes. Turn out onto rack and let cool completely before slicing. Serve with jam, butter & tea. Wrap remainders and store in refrigerator.
*Bring to room temperature before using.
