Pea Salad
This was a traditional Thanksgiving item in the Holleman household. Now we eat it regularly, anytime I think the meal needs something green. All these things are standard items in my refrigerator and freezer.
The flavor of pimento adds a tart note to this salad. With the red bell pepper it’s a little sweeter. If I need something fancier, I might add two colors of pepper and pick a cheese in a contrasting color. It’s a very flexible salad.
Using Aioli to replace the mayonnaise makes it very garlic-y. It's now the family's favorite way to have Pea Salad!
Yield: 4-6 servings
Time: 10 minutes (or less)
Ingredients:
2 cup peas ( I use frozen because we like the texture, Nina never used anything but “LeSeur”)
1/4 cup chopped pimento (you can substitute red bell pepper here)
1/2 cup grated Cheddar cheese (or pea-sized cubes if you have a cheese block)
1/4 cup low fat mayonnaise or Aioli
Instructions;
Toss gently until everything is coated. Chill until ready to serve.
