Aioli
This is a garlic flavored mayonnaise. It is best spread on cold French or Italian bread slices. It can be used an appetizer or just placed on the table with a basket of bread slices to accompany a meal.
If I put this out with some sliced French bread, the kids will go through a couple of loaves while standing around in the kitchen chatting.
I also use it to substitute for mayonnaise in any savory application. Check out Pea Salad.
Yield: 1 cup
Time: 30 minutes
blender or food processor
Ingredients:
5-9 cloves of garlic
1 lime, juiced
1 egg
1/4 tsp salt
olive oil
Instructions:
Place peeled garlic cloves into the blender or food processor. Add the lime juice, egg and salt. Begin processing. While processing add the oil in a slow steady stream. The mixture will begin to thicken to a mayonnaise consistency.
If you use a blender the mixture will take less than 1 cup of oil before it becomes too thick to blend. This will make a thinner spread.
If you use a food processor, the mixture will take more oil and will become more “mayonnaise-like”. If you use a food processor, be sure to use the larger amount of garlic.
Cover finished spread and place in the refrigerator for at least 20 minutes to allow flavors to marry. If you eat it immediately the garlic flavor is very strong and biting
