Buried Breakfast
This was always a favorite at youth group camping trips! You need a good sized fire that has burned down to active coals. The fire was usually about right when Nathan had finished making coffee!
This is great way to use the leftover campfire potatoes from supper.
Special Equipment: A dutch oven for the campfire
Ingredients:
1 lb. breakfast sausage (or soy chorizo)
3 med potatoes, chopped fine
8 eggs
1 can standard biscuits (8-10)
1 cup shredded cheddar cheese
Instructions:
In a cast iron Dutch oven with a heavy lid, over hot coals, brown sausage. Sauté potatoes with sausage. When potatoes are slightly tender, make 8 small dents into the meat mixture and carefully crack a whole egg into each. Gently place the canned biscuits on top of the eggs, evenly spaced.
Cover the pot and burry it in hot coals for 20 minutes.
Unbury the pot, open it, and test the eggs for doneness. If done, sprinkle shredded cheese over top and serve.
