Super Simple Szechuan Beef
For a vegetarian option you can marinate extra firm tofu in the same marinade as the beef.
Yield: 4 servings
Time: 30 minutes (marinade beef ahead)
Wok or large skillet
1 lb Beef or tofu, shredded (cut into thin strips)
2 tbs Ginger root, grated
2 clvs garlic, finely minced
2 tsp chili oil (available at Oriental markets)
4 tsp sesame oil, divided
2 tbs lemon juice
2 tsp vegetable oil
6 cup chopped vegetables of your choice – Trader Joe has a bowl of precut fresh stir fry veggies in the produce sections
4 cup hot cooked rice
Marinade beef or tofu in soy sauce, ginger, garlic, 2 tsp. sesame oil, hot oil and lemon juice, for 2-8 hours.
Heat wok or skillet with remaining sesame oil and vegetable oil. Add beef and marinade to hot oil and stir-fry. Add vegetables and continue to stir-fry until beef is cooked through and vegetables are crisp-tender.
Serve in a bowl over hot rice.
