Sausage and Sauerkraut
We still make this from time to time. It really is our favorite way to have sauerkraut. The apples and potatoes take on the flavors of the kraut and the caraway seeds just enhance everything.
Now, thought, we will use a vegetarian polish sausage. We also like some of the different sauerkrauts. One of our favorites is made with beets.
Yield: 4 servings
1 lb low fat polish sausage
16 oz bag sauerkraut
2 green apples, cored and sliced
2 med potatoes, cubed
2 tsp caraway seeds
In a covered baking dish place the sauerkraut, and the sausage cut into 3 inch pieces. Place the potatoes into the juices and lay the apple slices on top. Sprinkle the whole with caraway and bake for 1 hour at 350.
