Simple Saag ( Indian Spinach)
Saag is one of our favorite Indian dishes. This is a simple saag. You will find much more traditional Saag under International Flavors.
Frequently other things are put into the saag, but this one is just plain. This is comfort food for me!
Ingredients:
2 tsp fresh ginger, grated
6 clv garlic, chopped
½ tsp cayenne (optional)
salt to taste
½ tsp garam masala, ground (available in stores, or see recipe)
1 lb frozen
½ cup coconut milk
Olive oil
Instructions:
Thaw spinach and squeeze out excess water. Mix ginger, garlic, cayenne, salt and garam masala with a little water to make a paste.
Heat oil in a skillet and sauté spices over medium-low heat for 5 minutes, adding water if needed to prevent sticking. Stir and check often to prevent burning.
Add spinach and cook for 15 minutes over low heat.
Stir in coconut milk and cayenne. Cook on low for 10 minutes. Taste for salt and spiciness. Adjust as necessary.
Serve with warm rice.
