New Sweet Potato Balls
When I was a kid one of my favorite holiday dishes was Sweet Potato Balls. You mixed canned sweet potato with cracker crumbs, molded this into a ball around a marshmallow. Then you rolled the whole in more cracker crumbs. This was then deep fat fried. The outside was crispy and the marshmallow melted into the sweet potatoes. I was sorry when this recipe gave way to healthier options!
So.. I tried to make an updated version. This recipe is a great way to use the leftover Spicy Sweet Potatoes, but you can start with fresh baked sweet potato, also. Just don’t use the tasteless canned ones.
Yield: 8-10 balls
Preheat oven to 400
Ingredients:
2 cup sweet potato, baked and mashed
2 tsp cinnamon (delete if leftover potatoes are used)
1 tbs butter (delete if leftover potatoes are used)
8-10 marshmallows
1 cup finely crushed cracker crumbs
1 cup Panko bread crumbs
Instructions:
Mix potatoes with cinnamon and butter, then with the cracker crumbs. Take about 1/4 cup of the potato mix and form into a ball around one marshmallow, covering the marshmallow completely. Roll ball in Panko bread crumbs. Place it on a cookie sheet that has been sprayed with non-stick spray. Repeat with the remaining potato mix.
Bake at 400 for 30 minutes. They should be toasty and hollow.
