Mandarin Orange Salad
This salad was traditional in Doug’s house for holidays. Our children grew up with it and it is one of their favorites.
I used to do it in a ring mold, but over the years that got bent and worn. I got my hand on an old Tupperware plastic jello mold. It is the one with the ring insert. I really like it because I can do the salad ahead and it has a lid built in.
Some years, finding orange sherbet is a small container is next to impossible. We have also become very conscious of sugar content. There is an option here to use sugar free jello and cream cheese instead of sherbet. This isn’t the traditional way, but we liked it pretty well.
Yield: 8 servings.
Ingredients:
2 sml boxes orange gelatin, regular or sugar free
2 cup boiling water
1 pt orange sherbet
OR
2 8oz packages of cream cheese
2 cans mandarin oranges, drained
Instructions:
Drain the mandarin oranges into a microwave safe 4 cup measure. Fill to the 2-cup line with water. Place in microwave and bring to a boil.
Add sherbet/cream cheese to jello while it is still hot and stir until thoroughly melted.
Add oranges; pour into a Jello mold. Chill for several hours or until set.
