Low Carb Cabbage Noodles
If you are on a low carb diet, sometimes you just want something that at least looks and feels like pasta. I found these noodles to be a pretty good substitute. Just use them with any pasta sauce.
One thing to remember, though is that unlike dried pasta, cabbage shrinks as it cooks. Start with a pile that looks way too big.
Yield: 1 serving
Ingredients:
1/4 head green cabbage
salt
olive oil
Instructions:
Cut cabbage into long ¼ inch wide strips. Bring a pot of water to boil and boil strips until soft and slippery. Salt them to taste and toss them in a little olive oil. Serve just like pasta with your preferred sauce.
