Faux Mashed Potatoes
These are great mashed potato substitutes when you are trying to limit your carbs. Sometimes we like them better than the real thing!
This recipe starts with fresh cauliflower. You can also find cauliflower in the freezer section. Frozen cauliflower is very soggy and you need to take a step to dry it if you want to mash it into something that resembles potatoes. You can do this by roasting it in the oven at 350° for about 20 minutes. It will have some crunchy bits, but that makes it better.
Ingredients
1 hd cauliflower, root and tough stems removed
1 tbs butter
salt and pepper to taste
¼ cup low fat sour cream
1 tsp freshly grated nutmeg
2 tsp chives
Instructions:
Steam the cauliflower until very tender. Allow to drain well on several paper towels. Mash cooked cauliflower or process in a food processor with the remaining ingredients, except chives. Toss in the chives and blend gently. Serve as a side dish just like mashed potatoes.
