Cucumber in Yogurt
This is a wonderful mouth cooling salad that is often served with Indian dishes. You can serve it with any spicy dish, though – it is so good for you!!
It calls for plain yogurt. I highly recommend homemade yogurt. Sometimes, if I’m being lazy or I haven’t made it to the grocery store, I will just put the homemade yogurt on the cucumbers, season with seasoned salt and call it yummy!
Yield: 4 servings
Cooking time (approx.): 10 minutes
Ingredients:
2 cup cucumber, seeded and chopped
1 cup plain yogurt
salt and sugar to taste.
2 tsp cumin powder
2 tbs finely chopped cilantro
1 tbs onion very finely chopped
2 tbs green chilies finely chopped
Instructions:
Add sugar and salt to yogurt to taste. Add cumin. Blend well.
Sprinkle salt over the chopped cucumber and set aside for about 10 minutes.
Gently squeeze the water out from the cucumber. Mix the cucumber into the yogurt along with the chopped onions, cilantro and green chilies. Keep refrigerated until needed.
