Chinese Cole Slaw
This is really only called “Chinese” because of the soy sauce and ramen noodles. It is probably more correctly “Asian Inspired Cole Slaw”. But it’s really good, so we will just be thankful for the inspiration and go on.
Yield: 6 servings
Time: 20 minutes if you like the noodles crunchy, 1 hour if you like them soft
Ingredients:
8 oz cole slaw mix
1 pkg Ramen noodles, Oriental flavor
1/4 cup olive oil
1/4 cup vinegar
2 tbs soy sauce
6 oz can, water chestnuts, chopped
2 tbs sesame seed
Instructions:
Place slaw mix in salad bowl. With fingers, before opening the package, crunch ramen noodles into small pieces. Carefully open the package and empty into the salad bowl, catching the flavorings packet. Add water chestnuts and sesame seeds.
In a jar place the contents of the flavorings packet, oil, vinegar, and soy sauce. Shake well and use to dress the salad.
If served immediately the noodles will still be crunchy. If you put the salad in the refrigerator the noodles will soak up the dressing and will be soft. This is the way I prefer it.
