Broccoli-Rice Casserole
This is another pot-luck standard. I remember that it was a popular dish when I was in High School. I guess it was a sneaky way to get us to eat broccoli. (Little did they know that if you give it to kids in lightly cooked flowerets, they think they’re eating small trees and love it.)

9x12 casserole
350°
Ingredients:
1/4 cup chopped bell pepper
1/4 cup chopped onion
1/2 cup chopped celery
1 tbs butter
2 cup cooked rice
1 can cream of mushroom soup
1/2 cup milk
20 oz frozen, chopped broccoli, cooked
8 oz jar, Jalapeno Cheese Whiz
Instructions:
Saute pepper, onion, celery in butter. Mix rice and broccoli with other vegetables. Mix soup, milk, and 1/2 cheese. Fold into broccoli mix and turn into greased casserole. Spread remaining cheese on top. Bake uncovered at 350 for 30-40 minutes.
