Tasty Triangles
This is a really old recipe that Nina loved. It was one she liked to make for parties, but I never made it much.
Fast forward to 2021. Doug went to Abilene to spend a few days with Memaw and Papaw. He was trying to think of simple recipes that would be easy for them to eat and would be temptingly yummy. He hit on this recipe and made it for them. He put a bag of frozen triangles in the freezer for them and they really enjoyed them.
They really are a nice snack, easily baked in a toaster oven. So not just party food anymore.
Yield: 72 pieces
Ingredients:
2 cup shredded sharp Cheddar cheese
1 1/2 cup green onions, (including tops) finely chopped
1 1/2 cup ripe and green olives, finely chopped
1 tsp curry powder
1 tsp black pepper
1 cup mayonnaise
6 English muffins, split
Instructions:
Mix all ingredients (except muffins). Split muffins and spread with mixture. Cut into pie shaped pieces, making 6 triangles to each muffin half. Freeze on a cookie sheet until hard. Place in plastic bags and store in the freezer until you need them.
As you need them, bake from frozen, 15-20 minutes at 350°.
