Sweet and Sour Meatballs - New Age
This was originally a recipe for Sweet and Sour Pork. It was good but such a sad thing to do to good pork. We decided to try it with meatballs and liked it very much. You also get veggies and fruit, so healthy (wink, wink).
Yield: 64 meatballs
Ingredients:
1 can pineapple chunks, drained, reserve juice
2 lb meatballs, cooked through
¼ cup brown sugar
1 tbs cornstarch
2 tbs soy sauce
¼ cup cider vinegar
2 green peppers, cut into 1 inch chunks
1 med onion, chopped into ½ inch chunks
Instructions:
Put meatballs into a crock-pot. Add pineapple, bell pepper chunks, and onion chunks.
In a small sauce pan place pineapple juice, brown sugar, cornstarch, soy sauce, and cider vinegar. Cook until thickened. Pour over meatball mixture in the crock-pot and toss gently to coat. Turn crock-pot on low and cook for 1 hour before serving.
This will keep warm as long as you need it to and is a good alternate meatball recipe for parties.
You can buy vegetarian meatballs at the store if you need a veggie option. Our favorite ones are sold at Ikea. (Yes Ikea. You don’t even have to assemble them!) They work great. Just sub them in and proceed with the recipe as written.
