Guacamole Salad
Too often people go for the really mushy avocados for guacamole. Try only slightly soft ones. You definitely don’t want green rocks, but avoid the really mushy ones, too.
This can be as simple or as complicated as you like. Add peppers or tomatoes if you want or just let it be easy. We like this so much that we have a special avocado masher.
Yield: 2 cups
Ingredients:
3 lg avocados – soft but not squishy
2 limes
4 clvs fresh garlic, grated
1 tsp salt
Optional:
¼ cup poblano peppers, chopped fine
¼ cup pico de gallo
Instructions:
Halve and remove seeds from avocados. Scoop the meat out with a spoon and mash with a fork. Squeeze the juice from both the limes and mix in. Add salt, garlic, and peppers or salsa.
Mix well. Serve with tortilla chips or veggies, or just put a scoop on top of a salad.
