Chili Con Queso
This is one of the most popular snacks of all time! This year at Early Voting, I volunteered to bring a snack and gave them the choice of Guacamole or Queso. Guacamole seemed like the much healthier and tastier option, but it was unanimous! Queso!
This version has the addition of chorizo which is a little different from the old traditional version. But chorizo always adds yumminess.
Special equipment: Small Crockpot with a removable crock
Ingredients:
1 lb Velveeta
12 oz soy chorizo
1 can Rotel Tomatoes and Green Chilies
Instructions:
Chop cheese into cubes and place into the crockpot. Add uncooked chorizo and tomatoes. Place crock into the microwave to speed up the melting.
If the Queso is too thick, add some milk to thin.
Stir the mixture to blend evenly and serve with Tostitos Gold or jicama and carrot chips.
