Arkansas Gold
(aka: Sausage Cheese Balls)
These were a holiday favorite of both the Holt and the Holleman houses. The recipes might have differed slightly but the results were the same.
Any celebration that needs to include breakfast probably will include Sausage Cheese Balls and/or Chee-Chee’s Kolaches.
Yield: Lots
350 degrees
Ingredient:
1 lb hot breakfast sausage
3 cup grated Cheddar cheese
3 cup biscuit mix (Bisquick)
Instructions:
Mix all ingredients well. The hands are about the only tools that really work well for this task. (see instructions on handwashing in the Safe Food Hints chapter.) Form into small balls about the size of a small pecan. Bake at 350 for 12 minutes.
These balls can be frozen raw. Put the balls onto a baking sheet, freeze then hard, then put them all in a Ziploc bag for storage.
Vegetarian Option: Substitute 1 ½ packages of Soy Chorizo for the breakfast sausage + ½ cup of olive oil.
