Roasted Garlic
This is a wonderful addition to any meal, especially Italian food. You roast the garlic in the pod and when it is done you can scoop out each clove from it’s skin with the end of a table knife. Spread the soft and creamy garlic on bread. You’ll never put butter on the table again!
Time: 1 hour
Ingredients:
1 garlic pod per garlic lover (you can share a pod between two people, but around our house, everyone gets their own)
1/2 tsp olive oil per pod
Instructions:
Carefully cut the pointed end off the pod of garlic, barely opening the ends of each clove, but not losing any garlic flesh. Brush the top with the drops of olive oil. If you have a crockery baker, soak it in water a few minutes then bake the pods in this. If not any closed baking dish will do, or enclose the pods completely in aluminum foil. Add 2 tbs of water before closing and baking. Bake at 300 for 1 hour. Serve hot with the meal.
You can take the roasted pods and squeeze the root end to push all the cloves out at once. Then you can use this to make roasted garlic flavored anything!
Update:
We have started buying fresh garlic already peeled at Sams or Costco. It is a large container and we can’t really use it before it begins to mold. We buy the large size anyway because it is so much cheaper than buying it in small quantities.
When it begins to look iffy we roast it.
You place the garlic pods into aluminum foil that has been sprayed with non-stick spray. Drizzle it with olive oil and sprinkle with a little salt. Seal up the package and bake at 300 for 45 minutes.
