Poppy Seed Dressing
This dressing keeps well in the refrigerator and is my favorite thing on a fruit salad. You can also use it on a green salad, but it is quite sweet.
I have made it a few times over the years, but the originally recipe made 1.5 quarts. That much dressing would live in my refrigerator until the oil went rancid.
For this edition I have cut the quantities so that it only makes 2 cups.
Yield: 2 cups of dressing
Equipment: blender
Ingredients
1.5 cup sugar
½ tbsp dry mustard
2 tsp salt
¼ onion, chopped finely
½ cup cider vinegar
1 1/3 cup salad oil
1 tbsp poppy seed
Instructions:
Place the first 5 ingredients in a blender and turn on medium speed. Begin adding the oil in a slow steady stream, blending constantly. Dressing should be thick and white. Add poppy seeds and mix. Store in a jar in the refrigerator.
