Brenda’s Teatime Tassies
These cookies are a traditional Christmas cookie from Doug’s childhood. Growing up his sister, Brenda was responsible for making them. To carry on the middle child tradition, Krystalyn became the Teatime Tassie baker in our household.
At some point over the years we discovered that Pampered Chef sold a tart press to simplify making these crusts. Now you can get them at many full-service kitchen stores.
Yield: 2 dozen
Time: 2 hours
Special Equipment: Mini muffin Tins and if possible a mini tart shaper
325 degrees
Ingredients
3 oz. Cream cheese
½ cup butter
1 cup flour
1 egg
½ cup brown sugar
1 tbs butter, melted
1 tsp vanilla
1/4 tsp salt
½ cup pecans, finely chopped
Instructions:
Soften cream cheese and butter. Blend together. Cut In flour and form dough into a ball. Chill for 1 hour. Shape dough into 2 dozen 1 inch balls. Place balls into muffin cups and using the tart shaper press against bottom and sides, making the crust.
Beat together egg, brown sugar, melted butter, vanilla and salt until smooth. Fold in pecans. Divide egg mixture between the tart shells. Bake at 325 for 25 minutes. Cool slightly before removing from tart pans.
