Rollo Turtles
This has become a favorite cookie for the grand’s to make. They make hundreds of Rollo Turtles each year.
The recipe is very simple and doesn’t require any prep work other than buying the ingredients. If you can find the unwrapped Rollos it really simplifies the task. If you have to buy them wrapped be sure to find yourself some elf labor!!
We also use Snyder’s Snaps for the pretzel. Any pretzel that makes a surface, like mini twisted pretzels, will work. The Snaps are a tiny grid and perfectly fit the Rollos. They give plenty of surface for the Rollo to stick to so these don’t fall apart. Snaps do come in several flavors, so be sure not to buy the Mustard ones. Yuck!
I can’t stress enough – buy fresh pecans! Go to a place that sells the current year’s crop. If you can’t buy fresh pecans, toast the pecan halves in the oven for about 10 minutes before using.
In this picture you can see something we tried this year. In addition to the Rollos and pecans, we did some with Hershey's Hugs and Christmas M&M's. The instructions are the same.
Preheat the oven to 350°
For each turtle you need:
1 Snyder’s Snap
1 Rollo
1 Pecan Half
Multiply this by as many as you need.
Instructions:
Take a cookie sheet and line it with parchment or a silicone mat. Put the pretzels out on the cookie sheet in a single layer. Only use the whole ones.
Place a Rollo on top of each pretzel.
Place the cookie sheet into the oven for 3 minutes.
Immediately when they come out place a pecan half on top and push down lightly. The whole thing should deform and the Rollo should wrap around the pecan and the pretzel holding the whole together.
Cool completely before removing from sheet. (This takes a while, so if you will be needing your cookie sheet back, using parchment will help with the relocation of the cooling Turtles.)
