Amada’s Queso De Flan
Amada was our maid for a number of years when I was living at home. She used to make this dish and it was so different from any other Flan I had ever had. It really is more like cheese than like custard. One day I asked her to teach me how to make it and she agreed. Coating the pan with the melted sugar is the hardest part.
I have added some new Instant Pot instructions.
Yield: 12 ‑ 18 slices
Time: 3 1/2 hours
Special Equipment: Bunt pan or tube pan
350 degrees
Ingredient:
¾ cup sugar
2 can sweetened condensed milk
8 eggs
2 tsp vanilla
Instructions:
Place sugar into a dry skillet (cast iron is best) and over medium heat. Stir constantly. Sugar will begin to melt. Do not let it burn, but it will turn dark brown and smell strongly of caramel. When the sugar is entirely caramelized, dribble it into tube pan. Be very careful here, the hot sugar can cause severe burns. Start with the outside edges then the inside edges. The bottom will get covered sufficiently with the excess. You must work quickly before sugar hardens. Fill in as much of the inside surface of the pan as possible. You can use the back of the spoon to spread it around a little. Set pan aside.
Mix milk, eggs and vanilla until well blended. Pour into prepared tube pan. You will hear lots of sugar cracking and that’s ok. Place tube pan into a water bath (a larger pan with about one inch of water). Bake in the water bath at 350’ for 2‑2 ½ hours. Allow to cool slightly and then unmold onto a deep serving dish. This will be juicy so select a serving dish with sides to hold the juice.
Instant Pot Instructions
The first thing you need to do this dish in the IP is a round pan that sits down inside your pot. It doesn't need to be a tube pan. I found a small layer pan that fit into my 6qt pot, but I had to buy something that fit in my 3 qt pot.
Also in both cases I had to halve the recipe to fit into the pan.
The recipe is the same as above, but halved. Follow the same instructions with regards to lining the pan with melted sugar and mixing.
Once ready to cook, cover the pan tightly. You don’t want water getting inside. The pan I bought for my 3qt pot has a snap on lid. For the cake pan I cover it all the way around with aluminum foil. .
Then set steaming rack into the pot and add water. Carefully lower the flan pan onto the rack. If you need to you can construct a sling out of aluminum foil to help getting the pan in and out of the pot.
Lid the pot and set it to steam for 30 minutes. Allow to release naturally. You can unwrap and turn It out onto your selected serving dish as soon as the pressure is released.

This recipe will multiply. You can put it into a counter pan, but if you have one that is not disposable it will be easier to do the burned sugar step.
Multiply the recipe by 3 and continue as directed in the original recipe. It will serve 40-50.
