Pizzelle
This is a recipe from Will’s family. It is a traditional Christmas cookie in their house. We looked into Pizzelle irons and they are available from Amazon at several price points.
Yield: 2 dozen
Equipment: Pizzelle Iron, preheated
Ingredients:
3 eggs, room temperature
1 tsp vanilla (optional)
¾ cup sugar
½ tsp anise (optional)
1/2 cup butter or margarine, melted and cooled
1 3/4 cups flour
2 tsp baking powder
Instructions:
In a large mixing bowl, beat the eggs and sugar. Add the cooled butter, vanilla and anise. Sift the flour and baking powder together and add to the egg mixture. The batter should be stiff enough to drop by spoon. Can refrigerate for a while to use later.
Drop a tablespoonful of batter onto center of hot Pizzelle iron. They cook quickly - Grandma Menucci used to tell us to count to 30 and the cookie would be done. Remove to a wire rack to cool. Then store in 2 pound coffee can to keep fresh.
This recipe is made with anise flavor but chocolate, orange, almond and raspberry are other options.
