Oatmeal Cookies
This oatmeal cookie recipe was given to us by Grandmother Holt. She remembers her mother making these oatmeal cookies and they were one of Papaw’s favorites, too. It is very easy because it can all be mixed with a spoon. No need to get out the mixer.
Yield: 3 dozen

cookie sheet, greased
Ingredients:
2 cup oatmeal
2 cup flour
1 cup sugar
1 tsp baking soda
2 eggs
2 tsp cinnamon
1 tsp vanilla
½ tsp salt
1 cup shortening, melted
1 cup raisins (optional)
Instructions:
Mix all ingredients except shortening and raisins. Add melted shortening and raisins last. Shape dough into walnut sized balls and bake on a cookie sheet for 12 minutes.
