No Sugar Added Fruit Dessert
This is a recipe given to me by my friend, Cindy. Her husband is diabetic and this is one of the recipes that they really enjoy. We served it at a church banquet and it was very popular.
Not having many dessert recipes that were appropriate for a diabetic, I wanted to be sure to include this one. It certainly won’t hurt the rest of us, either!
Serves: 8 servings, but multiplies well for a crowd
Time: 30 minutes, but holds well
Ingredients:
1 can chunky fruit cocktail in juice, drained
1 can pineapple chunks in juice, undrained
1 can mandarin orange slices, drained
1 box sugar-free, instant vanilla pudding (small box)
Instructions:
Place all ingredients in a large bowl and mix gently, until pudding is dissolved in juice. Chill until pudding has thickened and it is ready to serve.
