Impossible Pie
This was a very popular pie when I was growing up because it didn’t require a crust. Nina made it often because Buddy really liked it. She also considered it a “diet” food because it didn’t have as much sugar as a cake. Now, with all the oven stable artificial sweeteners, you could make it very light. The butter could be reduced as well.
Yield: 9-inch pie
Time: 1 hour
Blender and 9 inch pie plate, buttered
350 degrees
2 cup milk
1 cup sugar
½ cup Bisquick
4 eggs
1/4 cup butter
1 ½ tsp vanilla
1 cup coconut (extremely optional)
In the blender, combine milk, sugar, Bisquick, eggs, butter and vanilla. Cover and blend on medium speed for 4 minutes. Pour into a greased 9 inch pie plate. Let stand for 5 minutes. Sprinkle with coconut if desired, which I never do. Bake at 350 for 50 minutes. Serve warm or chill.
