Greatmother’s Fruit Cocktail Cake
We found this recipe in Greatmother’s recipe box (an old Current greeting card box). I don’t remember her making it, but I have had it somewhere. It’s pretty yummy.
Yield: 12‑15 servings
350 degrees
9x13 cake pan, well greased
2 cup sugar
2 cup flour
2 tsp baking soda
½ tsp salt
2 eggs
1 can fruit cocktail, undrained
Mix sugar, flour, soda, salt and eggs until smooth. Fold in fruit cocktail. Pour into pan. Bake at 350 for 30 minutes. All ovens are different so test with a toothpick, it should come out clean.
Icing:
11/3 cup sugar
1 stk butter
3/4 cup evaporated milk
½ cup coconut (optional)
Boil first three ingredients for at least 5 minutes. Remove from heat and add coconut. Pour over cake, in the pan, immediately after taking it from the oven. When the cake is cool, cut into squares and serve.
