Frozen Pink Treats
One of Emily's favorite treats as a kid actually happened by accident. While making a desert dish for an event her mom put the dish into the freezer to set and it set for too long and froze. However, it was quickly discovered that this treat is even better when served frozen and it has become a staple in her memory as well as our freezer. The kids love them and they are super easy to make.
Yield: 2 dozen
Time: 15-20 minutes for prep, 1-2 hrs for freeze
2 cupcake pans lined with cupcake liners
Ingredients:
1 14oz Can sweetened condensed milk
8 oz Sour cream
8 oz Frozen whipped cream (thawed)
1 20oz Can crushed pineapple (drained)
1 20oz Can cherry pie filling
½ cup Pecans (chopped)
Instructions:
Mix condensed milk, sour cream, and whipped topping together until smooth. Stir in pineapple and pecans until incorporated. Gently fold in cherry filling until entire mixture is same color of pink.
Distribute the mixture into your cupcake liners and place into the freezer. Once thoroughly frozen they can be put into a zip top freezer bag to prevent freezer burn.
