Forgotten Cookies
This is a recipe that Doug and I both remember from our childhood, and it is one that was served at one of our wedding showers because one of the hostesses knew it was one of his favorites. He got to come after the guests were gone and help load up the gifts and eat forgotten cookies.
Yield: 2 dozen cookies
350°
Cookie sheet, parchment covered
Ingredients:
4 egg whites
1 1/3 cup sugar
1 tsp lemon extract
2 cup pecans, chopped
Instructions:
Beat egg whites until frothy. Gradually add sugar beating constantly. Eggs should be quite stiff and thick and there should not be any sugar grains. Fold in lemon extract and pecans. Drop by teaspoons onto the parchment. Place into a preheated oven and turn oven off immediately. Leave in the oven overnight.
These are a delicate cookie, so remove them gently and keep them in an airtight container. They will get soggy otherwise.
