Fattigman Buckles or Poor Man’s Cookie
Karla writes, “This is a Norwegian cookie that my family has always made - it came from my father's mother - Grandma H. Neither Will or Tony ever knew her but she was a fabulous cook and a wonderful grandma. I have the recipe in the back of my mom's cookbook written in her hand - which is extra special to me as my mother hadn't been able to write for many years - at a guess since 1984.”
Yield: about 6 dozen
Special Equipment: a large pan for frying
Ingredients:
12 egg yolks
¾ cup sugar
¾ cup milk
2 stks melted butter
2 tbsp ground cardamom seed
2 tbsp baking powder
2 oz whiskey
enough flour to make a stiff dough
Oil for frying
Powdered sugar (optional)
Instructions:
Blend together all ingredients but the flour. Start adding flour until dough is very stiff. Refrigerate the dough overnight to allow the cardamom to permeate the dough with goodness.
The next day you will begin rolling out portions of the dough very thin - 1/8th inch or less. Cut the rolled out portion into strips about 2 inches wide and then cut across to make elongated diamond shapes. Cut a small slit in both ends of the diamond and pull the tip through the slit to form what looks like a buckle.
As you are rolling out the dough melt oil in a large frying pan until hot. Then start deep frying the buckles until golden brown and remove to toweling to cool.
Some families sprinkle powdered sugar on the cooled cookies we never have done this - mostly because we just enjoyed them the way they are and they were gone so fast.
