Chrissy’s Chocolate Cake
Whenever I would go to visit my Aunt Chrissy in Gould Oklahoma she would serve my favorite chocolate cake with frozen peaches. Once one of her boys said they would like cake and peaches sometime when I wasn’t coming. It was the first time I realized that she really made it for me. I thought they had it every week!
Yield: 12-18 pieces
Time: 90 minutes
9x13 baking pan, greased
350°
Cake Ingredients:
3 tbs cocoa
1 ¾ cup flour
1 ½ cup sugar
¾ tsp salt
¾ tsp soda
1 cup soured milk (add 1 tsp vinegar to cup of milk)
2 eggs
¾ cup shortening
1 recipe icing (below)
chocolate chips, chopped pecans, fresh frozen peaches
Cake Instructions:
Sift all dry ingredients in mixing bowl. Add milk, eggs, and shortening and mix about 3 minutes. Pour into a 9x12 pan, greased and floured. Bake at 350 for 30 minutes. Do not overcook. Cool.
Icing Ingredients:
1 egg
2 tbs shortening, melted
2 tbs cocoa
¼ tsp salt
2 cup powdered sugar
Icing Instructions:
Mix all ingredients together. Add more powdered sugar to make a spreadable consistency. Ice cooled cake, then sprinkle with chocolate chips and chopped pecans.
Serve with fresh frozen peaches, partially thawed.
