Tortilla Soup
This is a very fast meal, but it can also be held for a long time. Do not put the tortillas in the soup until you are ready to serve it.
I like it especially because it is vegetarian. Tortilla Soup is usually made with chicken and this one isn’t. You won’t miss the chicken.
Yield: serves 6
Time: 30 minutes to 2 hours
Ingredients:
1 can tomatoes
1 can water
2 tbs chili powder
1 tsp cumin
1 tsp garlic
½ cup onions, minced
1 cup frozen peas
1 cup frozen corn
1 can chili beans, do not drain
20 corn tortillas, cut in quarters
Instructions:
In a large pan simmer tomatoes, water, cumin, garlic, and onions for 20‑30 minutes. Add peas corn and beans and simmer until ready to serve. 3 minutes before serving put tortillas into soup and return to a boil. Serve immediately.
