Chili
This chili is a little different from Chee-Chee’s but it contains everything you need for a meal in one bowl. Chili purists would probably want to call it something else. They can write their own cookbook.
I serve it with crackers, or corn tortillas. If you want to get fancy, serve it with Jalapeno Cornbread.
I’ve added a vegan option at the bottom.
Yield: 5-6 servings Time: 1 hour large deep skillet or 6 hours in a crockpot
Ingredients:
1 lb ground turkey, browned
1 cup onions, chopped
3 clvs garlic, minced
1 can tomatoes
1/4 cup chili powder
2 tbs cumin
1 can chili beans (vegetarian)
1 cup green bell peppers, chopped
1 cup carrots, sliced
1 cup frozen corn
Instructions:
Brown meat, onions, and garlic in a skillet. Add tomatoes, fill empty tomato can with water and add. Stir in spices and simmer for 30 minutes. Add beans, peppers, carrots, and corn. Simmer 30 more minutes.
As a variation put the browned meat mix and all else into a crockpot. Cook for 6-10 hours.
Vegetarian/vegan Option: Hydrate one cup of TVP (Texturized Vegetable Protein – available in the health food aisle) with one cup of vegetable broth and substitute it for the turkey. No need to brown it, just pour it in with the other ingredients.
