Chee-Chee’s Chili
I have no idea how many times we ate chili at Chee-Chee’s house while we were in school. It was everyone’s favorite.
When we lived in College Station it took us one hour to get from our door to Cheech and Nolan Ray’s house. We did it often. They always welcomed us and fed us well. Frequently on Friday afternoon I would call them and say, "You have anything going on this weekend?" We'd throw some things in the car and get there by supper time. They always opened the door and welcomed us in.
Yield: 4-6 servings
Time: 3 hours
Crock pot
Ingredients:
2 lb ground beef (we often substitute ground turkey, even ground deer with good effect)
1 lg onion
1/2 cup chili powder
1 tbs garlic powder
3 tbs ground cumin
1/2 tsp cayenne powder
15 oz can of tomato sauce
Instructions:
Brown ground beef and onion. Add spices. Place in crock pot with tomato sauce and one can of water. Cook in crock pot on high for at least 1.5 hours.
Beans can be added if desired. Use 1 lb of dried pinto beans or 1 to 2 – 15 oz. cans of pinto beans. It really stretches the chili to feed more hungry appetites and doesn't cost much.
But if you want real chili, don’t put in the beans. This is the rule in Texas – no beans in the chili.
