Ranchos Huevos
This is one of Doug’s favorite recipes and not necessarily for breakfast. Recently we have discovered that this is also a similar to a middle eastern recipe called Shakshouka.
Seems like eggs poached in a spicy tomato sauce is a good idea in any culture.
Yield: 3‑6 servings
Time: 1 hr
Ingredients
1 clove garlic, minced
1 onion, chopped
1 green pepper, chopped
2 tbs olive oil
1 can green chilies, chopped
1 can tomato sauce
1 tbs cumin
1 tbs chili powder
1 tsp oregano
6 eggs
Instructions:
Saute the first three ingredients in the olive oil until the onion is transparent. Add all of the other ingredients except the eggs. Rinse out the tomato sauce can with water and add that to the mixture. Bring the entire mixture to a simmer. Simmer for 10-15 minutes to allow the flavors to marry.
Carefully break the eggs into the mixture keeping the white as contained as possible, and cook uncovered until the eggs are set to your satisfaction.
Serve with corn tortillas or flat bread .
