Oven Pancakes
In our house everyone loves pancakes for breakfast. Doug makes pancakes when he fixes breakfast, but on school mornings, pancakes are just too time-consuming. The worst part of pancakes though is that the cook never gets to sit down with the rest of the family, because they are making more pancakes.
This recipe has proven to be a very good solution to the great pancake problem. It calls for Bisquick, but any biscuit mix will do. When the kids were home I bought Bisquick in the huge box at Sam’s and use it for this recipe as well as the muffin variations in this chapter.
Yield: 6 servings
Time: 30 minutes
Jelly Roll Pan
400 degrees
Ingredients
2 cup Bisquick baking mix
1 cup milk
2 tbs oil (olive or vegetable)
2 eggs
non-stick spray
Instructions:
Mix first four ingredients in a bowl. Spray the roll pan with non-stick spray. Be sure to spray the sides. Pour batter into the pan and tilt the pan to spread it evenly. Bake at 400 for 20 minutes. Cut into 12 pieces and serve with syrup.
Variations:
Banana Pancake -
Add two mashed bananas to the batter (use the ones that have lots of black spots for maximum sweetness). Continue as above. (Optional: 1 tsp nutmeg, 1/4 cup sugar, 1/2 cup finely chopped nuts)
Apple Pancake -
Slice and core two apples. Process in a food processor or chop fine. Add to batter and continue as above. (optional: 1 tsp cinnamon, 1/4 cup sugar, 1/2 cup oatmeal)
