Instant Pot Oatmeal
I love to make Steel Cut Oats in the Instant Pot. Get the long cook oats not the quick cook oats. I put dried blueberries in them, but you could substitute any fruit or flavoring.
I bought 6 – 1 ½ cup reusable plastic containers. This recipe makes six breakfasts.
Yield: 6 breakfasts
Time: 30 minutes
Special equipment: Instant Pot
Ingredients:
2 cups Steel Cut Oats, long cook
4 cups liquid
6 oz dried blueberries
2 tbsp agave nectar (or other sweetener to taste)
Instructions:
A note about the 4 cups of liquid – you can use water or milk. But my favorite thing to use is the whey from the yogurt recipe (one of my three favorite IP recipes). That recipe produces about a quart of whey which is perfect. You can top it up with water if you need to.
Put the oats and water in the pot. Cook on high pressure for 15 minutes and let the pressure come down naturally.
When you open the pot it will look a little soupy. Add the blueberries and agave. Be careful about over sweetening. Divide the oats between the little containers and refrigerate until you are ready to use them. The blueberries will soak up any extra liquid.
You can eat the oats cold or warm, and add some chopped pecans if you like.
