Hominy-Sausage Casserole
Nina used to make this casserole for all family gatherings. It was considered a breakfast food. Usually she would accompany it with avocado and grapefruit salad. This was long before avocado was fashionable and the statin drugs outlawed grapefruit.
Early in our marriage Doug must have said something that made her think this was his favorite casserole. She made it every time we came. Hominy has never been one of his favorite foods but he ate it every time because she made it just for him.

Time: 1 ½ hours
Ingredients:
2 lbs sausage, browned
2 onions, chopped and browned
2 can mushroom soup
1/2 cup light cream (1/2 and 1/2)
1/2 cup green chilies (canned), drained
3 can hominy (standard size cans), drained
tabasco to taste
1 cup bread crumbs
Instructions:
Blend everything together except bread crumbs. Top with bread crumbs. Bake at 300° for 1 hour.
Updated/Vegetarian options
Substitute 2 packages of Trader Joe Soy Chorizo for the sausage.
Substitute 98% fat free cream of mushroom soup or Healthy Request cream of mushroom.
Instead of canned hominy, try dried hominy - 1 cup, covered with water, salted and cooked in the Instant Pot for 40 minutes.
Instead of regular bread crumbs, use Panko.
