Cinnamon Nut Muffins
These are some of our favorite muffins. They are easy to make and really yummy.
Yield: 1 dozen muffins
Time: 30 minutes
Muffin tins, sprayed with pam
375°
Ingredients:
1 3⁄4 cup flour
½ tsp salt
½ tsp cinnamon
1 1⁄4 cup brown sugar
½ cup butter
2 eggs
1 tsp vanilla
1 tsp baking soda
1 cup buttermilk
½ cup pecans, chopped
Instructions:
Mix together dry ingredients. Add softened butter, eggs, vanilla and mix well. Mix soda into buttermilk and then pour into batter mixture. Blend well. Fold in pecans. Fill greased muffin cups 2/3 full with batter and bake at 375 for 15‑20 minutes.
This batter stores well in the refrigerator for up to two weeks. Double or triple the recipe and keep the batter on hand. When ready to use, place cold batter into the desired number of muffin cups and bake.
