Cheese Frittata
Here’s another in the series of 30 minute recipes. This is similar to quiche but has no crust.
I see Frittata as a "clean out the fridge" recipe. You can easily add lots of things like spinach and mushrooms, soy chorizo and salsa, turkey sausage and bell peppers… use your imagination! Some things may need to be cooked a little, but just put them into pie plate before the cheese.
Yield: 5 or 6 servings
Time: 30 minutes
400°
Pie plate sprayed with non-stick spray
Ingredients
1 cup grated Cheddar cheese
1 cup grated Mozzarella cheese
6 eggs, beaten with a whisk
Salt and pepper to taste
Instructions:
Place two cheeses evenly in the bottom of the pie plate. Add salt and pepper to beaten eggs and pour mixture evenly over the cheese. Tilt slightly to evenly spread eggs. Bake at 400 for 20 minutes. Slice and serve hot.
