Breakfast Pizza
This is a very simple breakfast. When in a hurry on school days we would make it with cheese and eggs only. On the weekends when we had more time we’d add meat or other pizza type toppings.
Nowadays you don’t have to wait for the weekend for the whole pie. You can buy pre-browned sausage in the cold section or in the freezer section. You can also find a Morningstar Farms product called Griller Crumbles for a vegetarian option.
Since Trader Joe’s has come to town, we have discovered Soy Chorizo. This has really enhanced our vegetarian pizza. Just spread the raw chorizo onto the pizza like cooked sausage. It is very low in fat, so it won’t leave grease puddles.
This recipe works great for parties – an easy handheld breakfast. Make lots. Everyone loves it.
Yield: breakfast for 6-10 people
Time required - 30 minutes
Special tools: a roll pan (cookie sheet with sides – half sheet size)
Preheat oven to 375°
Ingredients:
1 can pizza crust (This is found in the grocery store next to the canned biscuits. I like Pillsbury Classic Pizza Crust.)
2 cup cheese, shredded (we use sharp cheddar, but a Mexican blend is also good.)
8 eggs, beaten with a fork until they are a uniform color
¼ cup half and half
1 pkg precooked turkey sausage
or
1 pkg Soy chorizo or Morningstar sausage crumbles
Instructions:
Open the canned pizza crust, gently unroll and begin to stretch to size of pan. When you have it stretched thin lay the dough into pan and gently work the thicker edges outward toward the sides of the pan. Pinch together any holes that develop in the middle. The crust should easily fit in a roll pan and go slightly up the sides. Forming a little lip up the side is important when it comes time to wash the pan. If the egg mixture seeps down under the pizza crust it requires some elbow grease to remove.
Spread the sausage over the pizza, going right up to the edge so no one goes without. Evenly place any optional ingredients then spread the cheese on the top. Crack the eggs into a bowl and whisk them with the half and half until they are an even color. Slowly and evenly pour the eggs over the cheese and other toppings. Tilt pan slightly to evenly spread the eggs.
Bake immediately for 20 minutes or until the eggs are thoroughly cooked and the top is golden brown. Sometimes the pizza will puff up in the middle and look pregnant. Don’t worry. It will go down when it comes out of the oven. Punch a hole in the bubble to help it.
Cut into 12- 24 square pieces and serve. For a breakfast buffet with lots of other food choices you can cut them into 48 small squares.
Note: If you are preparing your pizza ahead and want to hold it before baking – don’t add the eggs. Put the eggs on right before baking so they don’t have time to seep under the crust. As mentioned above – that can really make for a cleaning nightmare.
I would like to tell you to spray the pan with pam, but this really makes it hard to stretch the pizza dough. In the end, this pizza is so popular just say “I’ll make it if you wash the pan!”
