Stress Reduction Yeast Bread
This is another recipe from the La Piñata cookbook. (see Ozark Cowbutter Bread) In the cookbook it is called 90 Minute Yeast Bread. We liked the change in title because instead of the usual kneading technique, this asks you to pound it with a mallet. Hence, reduced stress!
Yield: one loaf
Time: 90 minutes
Loaf pan, greased
400 degrees
Ingredients:
1 cup warm water
1 pkg yeast
1 tsp salt
2 tbs sugar
1 tbs oil
3 cup flour
Instructions:
Dissolve yeast in water. Mix in all other ingredients. Mix into a soft but not sticky dough. Let stand for 15 minutes.
Using a heavy wooden mallet, pound dough for one minute or until stress is relieved.
Form into a loaf. Place into a greased loaf pan. Let stand covered for 30 minutes.
Bake at 400 for 30 minutes. Glaze with melted butter while hot. Allow to cool slightly before slicing.
