Lawanda’s Refrigerator Rolls
We are in possession of a small box which once held Current greeting cards. It is full of Grandmother’s recipes. This one was just labeled as it is here. I don’t remember Lala making it, but she must have if Grandmother said she did!
Yield: 3 dozen rolls
Time: pre-prep – 30 minutes
Special equipment: airtight storage container 350 degrees
Ingredients:
2 cup warm water
1 pkg yeast
6 cup flour
1 tsp salt
1/2 cup sugar
1 egg
2 tbs oil
Instructions:
Place water, sugar and yeast into a mixing bowl. Allow yeast to bloom for 5 minutes. Add 3 cup flour, salt, egg, and oil. Beat until smooth. Slowly add additional 3 cups flour until all is mixed in. Knead 5 minutes or until smooth and elastic. Cover and refrigerate up to 3 weeks. To use: pinch off desired number of walnut-sized dough balls and place into greased baking sheet or muffin tins. Allow to rise in warm place for two hours. Bake at 375 for 25 minutes or until golden brown. Brush with melted butter if desired.
