Memaw’s Buttermilk Rolls
After 37 years of trying, we still cannot wrest the recipe for Doug’s favorite bread from Memaw. This is an adaptation based on watching and tasting over the years. We suspect we will never really know…

400 degrees
Ingredients:
4 1/2 cup flour
2 pkg yeast
3 tbs sugar
1 tsp salt
1/2 tsp soda
1 1/4 cup buttermilk (Memaw always uses soured milk)
1/2 cup water
1/4 cup shortening
Instructions:
In a large mixer bowl, combine 1.5 cup flour, yeast, sugar, salt, and soda. Mix well. In the microwave heat buttermilk, water and shortening until warm (120-130, shortening does not need to melt). Add to flour mixture. Blend at low speed until moistened, then beat 3 minutes at medium speed. By hand, gradually add enough flour to make firm dough. Knead on a floured surface until smooth and elastic, about 5 minutes. Place in a greased bowl, turning to grease the top and allow to rest for 20 minutes. Punch down dough and divide into 24 pieces. Form into balls and place on a greased cookie sheet. Cover and allow to rise until doubled, about 20 minutes. Bake at 400 for 20 minutes or until golden brown. Remove from pan and brush with butter if desired. (Try them cut in half and served with leftover Thanksgiving turkey.)
