Not My Mama’s Egg Nog
My mom loved making the Helen Corbitt Egg Nog (found in this chapter) and we loved drinking it. The problem is that it is really potent and the recipe makes a bunch!
So every year we would buy a small container of Egg Nog from the grocery store and dutifully pour a small cup for everyone. The rest ended up down the drain because no one really liked it.
One year we watched the Alton Brown episode about Egg Nog and discovered the truth. The store-bought stuff is really nothing at all like the real thing. Also – all that alcohol isn’t necessary. It is so good you can drink it with just a bit or none at all. It’s almost good for you!
Yield: 6 – 6oz cups
Ingredients
4 eggs, divided If you are concerned with the health issues of using raw eggs, you can look for pasteurized eggs.
1/3 cup Xylitol or sugar
1 tsp sugar
1 pt whole milk
1 cup heavy cream
3 oz bourbon or brandy
1 tsp freshly grated nutmeg
Directions
In the bowl of a stand mixer, beat the egg yolks until they lighten in color. Gradually add the 1/3 cup Xylitol and continue to beat until it is completely dissolved. Add the milk, cream, bourbon and nutmeg and stir to combine.
Place the egg whites in the bowl of a stand mixer and beat to soft peaks. With the mixer still running gradually add the 1 tablespoon of sugar and beat until stiff peaks form.
Whisk the egg whites into the mixture. Chill and serve.
