Layered Rainbow Mocktail
Recently we had a family birthday party with a rainbow theme. I wanted a signature theme drink, but since two of the honorees were underage and one host was pregnant, I decided to go with a mocktail.
I experimented with several items to see if I could use diet drinks or lighter versions of these drinks. I found that the sugar content is pretty important in the layering.
Glass layers better than plastic, so using glass wine glasses was the best choice.
Ingredients:
1 pkt cherry Kool-Aid (the kind you have to add sugar to)
1 cup sugar
1 cup water
1 qt orange juice
1 ltr club soda
Blue food coloring
Instructions:
Boil the sugar and the water until the sugar dissolves. Cool slightly and add the Kool-Aid packet. When this is cool, put it into a squeeze bottle like you can find in the cake decorating aisle.
Add blue food coloring to the club soda until it is a nice medium blue.
The first layer will be the Kool-Aid layer. Take a spoon and put the tip against the inside of the glass as low as possible while still being able to pour into it. Squirt the Kool-Aid into the spoon, slowly, allowing it to dribble down the side of the glass into the bottom. Continue until you have a ¾ inch layer.
Then rinse the spoon repeat with the orange in the same way, pouring slowly into the spoon and allowing it to layer on top of the Kool-Aid.
Rinse again and repeat with the layer of club soda on top.
The layers will separate with some blending between.
